would it be just fine to put 5 bolts on the pressure plate instead of 6 with the flywheel? I believed that the torque is in the disk going to the shaft and not with it..

Make sure you get a good set of the bolt extractors, last one I used was a cheap one and it was a nightmare to get it to grip. Once you own them though they come in handy.

not a good idea. Just get a thread extractor, or a set of needle punches and about 4 hours of your time and get it out.

 

The pressure plate bolts are in tension and they're responsible for taking the force applied by the pressure plate to the clutch plate. with one down, you might sacrifice some clamping force (read: clutch slip).
