I'm running twin dellortos on my 5K without a choke. When it's warm it ususally fires first hit. In cold weather it takes a couple more seconds to crank with a quick pump or two of the throttle while cranking. Apart from that, it's never really given any trouble.
It will run a little shit for a minute or two on cold days, occasionally stalling, but all in all it's easy to start.
BUT - mine has been properly tuned, on the dyno. If you're just slapping them on without a pro tune, then be prepared for all sort of shitty times.
